Hasaki means "cutting edge" in Japanese, hence the perfect name for this professional line of Japanese-style knives. The knife blades are made of specially modified NITRO-B stainless steel (X50CrMoVN15 / AISI440B), in which the addition of nitrogen particles significantly improves anti-corrosion properties and hardness after heat treatment. The knife's hardness is 57-58 HRC. Following Japanese technique, the knives are sharpened on one side, so food only comes into contact with the blade for a short time, reducing friction to a minimum. The perfectly balanced and comfortable riveted handles are made of POM synthetic resin. Dishwasher safe.
